The popover is a purely American tradition, “popping” up in cookbooks across our country since the late 1800s. There are even popover holidays! ​

When he came to America, Chef Laurent Tourondel fell in love with this baked American treat which led him to redefine the concept of breaking bread. ​

With this new fascination in mind, LT created his own distinctive popover, famously prepared with black pepper and cheese.​

A native of France, Chef Laurent Tourondel (LT), is a well-respected visionary in the restaurant industry. Named Bon Appetit magazine’s Restaurateur of the Year, his culinary background includes stints at the three-star Michelin Relais & Chateau Troisgros in France and the former Cello in New York City, for which he received three stars from the New York Times.
